本課程介紹食品微生物的歷史、分類以及和人類日常食品--尤其是發酵食品製造有關的微生物。同時介紹食品殺菌原理,使學生了解微生物在人類食物製備各方面所扮演的角色。
The history, classification, food preparation-related microbes- especially those for food fermentation, food sterilization engineering as well as incubation of microbes will be lectured in the course. The aim is to have students know the roles of microbes in our daily life foods.
