保健食品為21世紀的新興食品產業,在中國大陸、歐美、日等地以發展多年且該產業頗具遠景,而本國尚在起步階段,因此本課程旨在介紹保健食品的概念、理論及技術,並啟發學生運用已學過之中藥學基本理論,使學生具備保健食品方面的基礎知能,以因應未來開發中藥保健食品產業發展的人力需求。
